Weather slowed flow of sap, but pure syrup, cakes served Sunday
space
So far the sapping season has gotten off to a dubious start, but that won’t stop Adamski’s Sugar Bush’s springtime celebration on Sunday.

The Adamskis are hosting their second annual “Perfect Pancake Party” Sunday from 8:30 to 11:30 a.m. at North Star Lanes.

Enjoy breakfast “with the works,” including pure maple syrup, served from two food lines, for $7 per person or $3.50 for children 10 and under.

There will also be an opportunity to purchase maple syrup for $3.50 a pound while supplies last. Bring a clean container and cover for filling.

The morning will also include maple products available for purchase, maple gift baskets, door prizes and a maple recipe contest. Bring in your entry on a 3x5 card.

There will also be a Power Point presentation on maple production, a fascinating operation that takes place for only a few brief weeks in spring.

Weather permitting, the Adamski family will also host tours of their sugar house and its big, gas-fired evaporator, a marvel of modern technology for a process largely unchanged in hundreds of years. The operation is located at W10923 Winter Rd.

The Adamskis, as well as dozens of other operations ranging from just a few trees to thousands of taps along miles of lines, are in the midst of the sapping season. Things got off to a slow and late start, with temperatures too cold during the day to get the trees’ juices flowing, and snow cover in the woods making it nearly impossible to get to the maples. Conditions have improved somewhat in recent days.

Jim Adamski closely monitored the flow of maple syrup from the high-tech, enclosed evaporator at the family's sugar bush southwest of Antigo.
